A seafood restaurant is a room whose menu changes with what came in that morning. The best ones, whether a Galician marisqueria, a Tokyo izakaya, a Mediterranean fish grill, or a New England raw bar, source from named boats or markets, post the catch on a board or chalk wall, and price by the kilo or the whole fish. The cooking is usually simple on purpose: ice for the raw bar, salt and fire for the grill, lemon and olive oil at the finish. A serious seafood kitchen earns its reputation through restraint.

The regional traditions are well-defined. The Galician and Portuguese Atlantic tradition runs on percebes (gooseneck barnacles), pulpo a feira (octopus with paprika), centolla (spider crab), and grilled whole fish (lubina, rodaballo, dorada). Marisquerias in Vigo, La Coruna, and Lisbon are the global benchmark for boiled and grilled shellfish. The French tradition splits between the Atlantic (Brittany oysters, scallops Saint-Jacques, plateau de fruits de mer) and the Mediterranean (bouillabaisse, sea bream, grilled sardines). The Italian tradition leans crudo (raw fish dressed simply with olive oil and citrus, especially in Puglia and Sicily) and the spaghetti alle vongole school. The Greek tradition is whole grilled fish with lemon and ladolemono. The Japanese tradition runs through sushi, but also through izakaya seafood (yakizakana, agedashi, sashimi platters) and the Hokkaido and Kyushu coastal cuisines. The New England tradition is clam chowder, lobster roll, oyster bars, raw bars, and steamed lobster. The Hong Kong-Cantonese tradition runs through steamed fish with soy and ginger and the live-tank wet-market restaurants. The Peruvian cevicheria is its own seafood format.

What unites them is sourcing. A serious modern seafood restaurant will list its boats or its market, refuse to serve overfished species (bluefin in some kitchens, monkfish from depleted grounds), and be honest about what's frozen versus fresh. Sustainability programs (Monterey Bay Aquarium's Seafood Watch, the Marine Conservation Society in the UK) now drive sourcing decisions in the upper tier.

Plateau de fruits de mer
The French raw-bar platter: oysters, mussels, clams, langoustines, prawns, crab, whelks, periwinkles, on crushed ice with mignonette, lemon, and brown bread. The Sunday lunch of the Atlantic French coast.
Grilled whole fish
Sea bream, sea bass, John Dory, red mullet, rascasse, or porgy, salted and grilled whole over wood or coals, served with lemon, olive oil, and salt. The Mediterranean default.
Oysters on the half shell
Cold, raw, briny, with mignonette, lemon, hot sauce, or simply plain. Regional varieties differ enormously (Belon, Kumamoto, Wellfleet, Sydney rock, Galician Carrils); learn to read the shell shape and origin.
Sashimi platter
Sliced raw fish, served on ice or shiso leaves, with soy and wasabi. Japanese fundamental; the diagnostic indicator of any fish-restaurant's sourcing.
Steamed whole fish (Cantonese)
Live fish (grouper, garoupa, sole), steamed with ginger and scallion, finished with hot oil and soy. The Cantonese benchmark.
Lobster roll
Cold lobster meat in mayo or warm in butter, on a split-top New England roll. Maine, Connecticut, and Boston each have their preferred version.
Bouillabaisse
Marseille fish stew with multiple Mediterranean fish, saffron, fennel, and orange peel, served with rouille and croutons. Originally a fisherman's dish, now an upscale ritual.
Pulpo a la gallega
Boiled octopus sliced over potato, dusted with sweet paprika (pimenton), drizzled with olive oil. The Galician specialty, served at fairs (a feira).
Sea urchin (uni / oursin / erizo)
Raw sea urchin roe, served on rice (uni nigiri), spread on toast, or eaten directly from the shell. Hokkaido and the Mediterranean both treat it as the deepest expression of marine flavor.
Whole lobster (steamed or boiled)
1 to 2 lb New England lobster, steamed, served with melted butter and lemon. The 'in the rough' Maine tradition. Also served grilled or roasted at higher-end rooms.
Spaghetti alle vongole
Spaghetti with manila or sea clams (vongole veraci), garlic, olive oil, white wine, parsley. Naples and the Amalfi coast. Best with sand-purged fresh clams; no parmesan.
Ceviche (Peruvian)
Raw white fish cured in lime juice with aji, red onion, cilantro, sweet potato, and choclo. Pacific-coast staple; covered in depth in the Peruvian pillar.

How to order

Look at the board. A serious seafood restaurant lists the day's catch with the boat, the region, or the market it came from. Order what was caught most recently and what's local to that coast. Whole fish ordered by weight (price per 100g or per kilo) is the diagnostic order; it usually comes grilled or salt-baked, sometimes filleted tableside. For the raw bar, pick three or four oyster varieties; the server should explain the differences (brininess, mineral content, finish). For shellfish platters, order one big plateau for two to three people; you'll find the value tracks with the langoustine and lobster count.

Most seafood restaurants want you to share. A clean order is: half a dozen oysters per person, one starter course (crudo, ceviche, soup, salad), one whole fish or shellfish main for two, vegetables and bread on the side. White wine glasses on the table from the start. Don't overdress; the chef has already balanced the dish. The rookie mistake is asking for tartar sauce on a serious seafood restaurant's fish (it signals you've come to the wrong room). Hot sauce on raw oysters is acceptable in some New England rooms and frowned upon in others; ask if you're not sure.

What to drink with it

White wine is the obvious answer and the canon is well-defined. Muscadet (Loire) with oysters; Sancerre and Pouilly-Fume with cooked white fish; Albarino (Galicia) and Vinho Verde (northern Portugal) with shellfish; Chablis with raw bar; assyrtiko (Greek) with grilled whole fish; Hermitage blanc and white Burgundy with richer fish (turbot, sole); riesling (Mosel, Alsace) with sweet shellfish; champagne with everything. Sake (junmai daiginjo, in particular) with sashimi and sushi. Beer (Belgian witbier, German hefeweizen, lager) with crab and shrimp boils. Mezcal with ceviche.

Hong Kong (Sai Kung) for live-tank Cantonese. Sydney (Saint Peter under Josh Niland) for whole-fish butchery. Boston, Portland (Maine), and Wellfleet (Cape Cod) for New England raw bars. Seafood as a restaurant category emerged from coastal fishing villages everywhere; the canonical regional formats (Marseille bouillabaisse, Galician marisqueria, Tokyo sushi counter, New England oyster house) all date to the 19th century or earlier. The 20th-century cold-chain revolution (refrigerated shipping, then air freight) made fish trade global and built the modern fine-dining seafood restaurant in landlocked cities. The 21st-century sustainability crisis (cod collapse in the North Atlantic, bluefin overfishing in the Mediterranean, salmon farming controversies) reshaped sourcing standards at the upper tier.
