The food program at a serious wine bar matches the list rather than competing with it. The usual shape is six to ten small plates designed to drink with the bottles: a charcuterie or cheese board, two or three fish or vegetable preparations, a pasta or grain dish, one bigger meat plate, a few snacks (gildas, olives, tinned fish, bread and butter). Service is usually counter-led or at small tables; the room is often small (20 to 40 seats), low-lit, vinyl-soundtracked.
