Halal dining covers a global tradition that extends from Indonesia and Malaysia (the world's largest halal markets) through the Middle East and South Asia to Western cities with sizable Muslim populations. What 'halal' covers in practice: pork is excluded entirely; alcohol is excluded from the kitchen and (usually) the menu; meat is from animals slaughtered according to Islamic ritual (dhabihah). Certification: certified vs self-attested
Certified halal carries an audit trail from one of the major certifying bodies (JAKIM Malaysia, MUI Indonesia, HFA UK, MUIS Singapore, IFANCA US, etc.). Self-attested halal means the owner declares the kitchen halal without a certifier - common at small family-run kitchens, particularly in cities outside the Muslim-majority world. Both can be excellent; certified is the higher-confidence option for observant diners.
Where to eat halal globally
Malaysia and Indonesia run the deepest halal scenes per capita - Kuala Lumpur, Penang, Jakarta, and Yogyakarta have certified halal at every price tier. UAE (Dubai, Abu Dhabi) hosts the highest-end halal fine dining. London has the strongest non-Muslim-majority halal scene (Edgware Road, Whitechapel, Tooting). Halal regional traditions
Southeast Asian halal: Malaysian (rendang, nasi lemak, nasi kandar, satay), Indonesian (gado-gado, soto ayam, nasi padang), Singaporean Malay. Middle Eastern halal: Lebanese (mezze, shawarma, manakish), Turkish (kebab, lahmacun, dolma), Iranian (kebab koobideh, chelo kebab - though Iran is majority Shia, halal is implicit). South Asian halal: Pakistani (biryani, nihari, haleem, karahi), Bangladeshi (kacchi biryani, panta bhat). North African halal: Moroccan (tagine, couscous), Egyptian (koshari, fatteh), Tunisian (brik, harissa). The same halal label covers very different cuisines.
What to ask if certification is unclear
Two questions resolve it. 'Is the meat halal-certified, or owner-attested?' tells you the certifier status. 'Do you serve alcohol on the premises?' tells you whether the kitchen is alcohol-free (some halal restaurants serve alcohol to non-Muslim guests; others are dry). Some observant diners only eat where the answer to both is the strictest level. Most halal-friendly travelers are flexible on certification but want to know the truth.

What's the difference between halal and kosher?
Both are religious dietary laws with similar slaughter rules (animal facing toward a specific direction; quick cut to the throat; blood drained). Halal is Islamic; kosher is Jewish. Kosher additionally requires meat and dairy to be separated and prohibits shellfish, pork, and certain other animals. Halal prohibits pork and alcohol but permits all dairy and most seafood.
Can I trust 'halal-friendly' to mean halal?
Not always. 'Halal-friendly' typically means the kitchen offers halal options but is NOT itself a halal kitchen - meat shares a kitchen with non-halal meat or alcohol is on premises. For observant diners this matters; for halal-flexible diners (most diaspora and traveler audiences) it's usually fine. Ask if you need certainty.
Are vegetarian dishes automatically halal?
Mostly yes, but two caveats. Alcohol used in cooking (wine in a risotto, beer in a beer batter) is non-halal even in vegetarian dishes. Cheese with animal rennet (much European cheese) is in a gray zone - some halal bodies accept rennet from halal-slaughtered animals only. Vegetarian dishes at a halal kitchen are halal; vegetarian dishes at an omnivore Western kitchen may not be.
