The French bistro is a 19th-century Parisian invention: a small, family-run room with a tight menu, an honest wine list, and the kind of dishes that get better the more times the same hands cook them. It is not haute cuisine and it is not casual food either. How to order

Order from the chalkboard, not the printed menu. The chalkboard is what the chef cooked that day; the printed menu is what the chef will cook on demand. The plat du jour is almost always the right answer. Lunch formules (set menus) at 18-26 euros are how Parisians eat midday: entree plus plat or plat plus dessert, with a 25cl pichet of house wine. A glass of red with steak, water (a carafe d'eau is free), bread (no butter), and a coffee at the end.

The rookie mistakes: asking for tap water by saying 'water' (ask for 'une carafe d'eau'), ordering steak well-done (the chef will judge), expecting bread before the meal (it arrives with the plat), and tipping more than rounding up (service is included by French law).

What to drink with it
