The French bistro is a 19th-century Parisian invention: a small, family-run room with a tight menu, an honest wine list, and the kind of dishes that get better the more times the same hands cook them. How to order
Order from the chalkboard, not the printed menu. The chalkboard is what the chef cooked that day; the printed menu is what the chef will cook on demand. The plat du jour is almost always the right answer. Lunch formules (set menus) at 18-26 euros are how Parisians eat midday: entree plus plat or plat plus dessert, with a 25cl pichet of house wine.
