Las Vegas eats on two clocks at once. The Strip is a 4.2-mile celebrity-chef shelf: Joel Robuchon's three-star room at MGM Grand since 2005, Bazaar Meat by Jose Andres now at the Venetian, Wing Lei at Wynn (the first Michelin-starred Chinese kitchen in North America), Estiatorio Milos, SW Steakhouse and Bavette's at Park MGM. The 1998 celebrity-chef boom under Steve Wynn at Bellagio reshaped the Strip; Picasso retired in 2024 with chef Julian Serrano, and Le Cirque closes in August 2026 after twenty-eight years. Off-Strip is where the city actually eats. Spring Mountain Road, west of I-15, is the densest Asian dining corridor in the western US: Raku since 2008 by chef Mitsuo Endo, Yui Edomae sushi omakase, Other Mama, Sparrow + Wolf, and the just-reopened Lotus of Siam on Sahara Avenue (the original location came back in May 2026 with chef Saipin Chutima). The Arts District on South Main has Esther's Kitchen (USA Today Restaurant of the Year 2026), Velveteen Rabbit, Able Baker Brewing and Vesta Coffee Roasters. Downtown's Fremont East carries Carson Kitchen, Atomic Liquors (the city's oldest freestanding bar, 1952) and PublicUs. The buffets that survived (Bacchanal at Caesars Palace, Wicked Spoon at the Cosmopolitan) still draw queues. Shrimp cocktail and the Strip steak still mean something here.
