A dedicated gluten-free kitchen handles no wheat, barley, rye, or contaminating grain. Cross-contamination risk is near zero. Naturally gluten-free cuisines

Is gluten-free the same as celiac-safe?
Not always. 'Gluten-free' on a menu means the dish doesn't intentionally contain gluten ingredients. 'Celiac-safe' implies no cross-contamination - dedicated equipment, separate fryers, separate cutting boards. For celiac diners, confirm the kitchen is dedicated or certified; for non-celiac GF diners, GF menu items are usually fine.
What sauces commonly contain hidden gluten?
Soy sauce (use tamari instead), most teriyaki, most stir-fry sauces, hoisin, oyster sauce, miso (some brands), Worcestershire sauce, malt vinegar, beer batter, breading on fried foods. Roux-based sauces (gravy, bechamel, veloute) use flour. Always ask if you're celiac.
Is sourdough bread gluten-free?
No. Sourdough is wheat-based and contains gluten. The fermentation does break down some gluten proteins, which is why some gluten-sensitive people tolerate sourdough better than commercial bread - but it's not celiac-safe.
Are all distilled spirits gluten-free?
Distilled spirits are technically gluten-free even when made from wheat or barley (the distillation removes gluten proteins). However, some celiac diners react regardless and prefer spirits made from non-grain sources (potato vodka, tequila, rum, brandy). Beer is NOT gluten-free unless explicitly labeled.
