A vegan restaurant uses no animal products at all: no meat, no dairy, no eggs, no honey, no fish or seafood, and often no animal-derived processing aids. The format, for most of its history, sat at the casual end of dining (vegetarian and vegan cafes, raw-food restaurants, juice bars). That changed sharply in the 2010s. Eleven Madison Park in New York went fully plant-based in 2021 (a three-Michelin-star restaurant making the switch was the signal moment). Daniel Humm's announcement was followed by serious vegan tasting menus opening in Los Angeles (Crossroads, Plant Food + Wine), London (Vanilla Black, Tendril), Berlin (Cookies Cream, FREA), Paris (ONA, the first one-Michelin-starred vegan restaurant in France), Bangkok (Broccoli Revolution, Bo.lan plant-based menu), and Tokyo (Faro, T's Restaurant).

The serious vegan kitchen does not try to replicate meat. The strongest rooms (Plates in London with a Michelin star from 2024, ONA in Ares, Eleven Madison Park) build menus that lead with vegetables, grains, legumes, mushrooms, nuts, and fermentation, treating the absence of animal product as a frame, not a constraint. The traditions most useful to plant-based fine dining are the Buddhist shojin ryori of Japan (a 1,200-year-old vegan tradition codified in Zen monastery cooking), the Indian subcontinent's vast vegetarian and vegan repertoire (especially Jain, which excludes root vegetables, and the dairy-free South Indian Tamil and Kerala traditions), the Levantine and North African mezze (hummus, mutabal, ful, falafel, koshary), and the Mediterranean vegetable canon.

The casual vegan restaurant remains the larger global category. The 2010s plant-based-meat boom (Impossible, Beyond, Oatly's milk replacements) made it easier to run mid-tier vegan rooms by reproducing burger and dairy formats with substitutes. The 2020s have seen pushback: serious vegan critics argue that the long-term direction is vegetable-led cooking, not animal-product replication, and that plant-based meat is a transitional product.

Defining vegan dishes

Hummus and warm pita
Chickpea and tahini dip, the world's most-eaten vegan dish. Origin disputed (Lebanese, Israeli, Palestinian, Syrian, Egyptian claims). The simplest test of a vegan kitchen's competence.
Falafel
Fried chickpea or fava balls, served in pita with tahini, pickles, salad. Egyptian-Levantine in origin; the global vegan fast food.
Whole roasted cauliflower or celeriac
The vegan center-of-the-plate dish. Made famous by Yotam Ottolenghi (whole roasted cauliflower) and Dan Barber (whole roasted celery root). Now standard at modern vegan fine-dining rooms.
Buddha bowl / grain bowl
Grains (quinoa, brown rice, freekeh), roasted vegetables, legumes, leafy greens, seeds, with a tahini or miso dressing. The casual vegan lunch standard.
Mushroom dishes
Maitake, shiitake, king oyster, lion's mane, porcini, treated as protein. Grilled, roasted, or in stews. The modern vegan kitchen's umami workhorse.
Dahl
Spiced Indian lentil stew (toor, masoor, urad, chana). Vegan by default in South Indian Hindu traditions; served with rice or roti.
Shojin ryori course
Buddhist monastic Japanese cuisine, 1,200 years old. Tofu in dozens of forms (silken, fried, smoked), pickled vegetables, miso soup, fresh tofu skin (yuba), seasonal vegetable simmer (nimono). Strictly vegan.
Tempeh or seitan main
Fermented soybean cake (tempeh, Indonesian in origin) or wheat-gluten meat (seitan, Chinese-Buddhist tradition), used as the protein anchor of a vegan plate.
Plant-based 'cheese' board
Cashew-based or fermented-nut cheeses, increasingly serious. Brands like Miyoko's, Treeline, and Vromage made plant cheeses approach the texture and complexity of dairy cheeses by the late 2020s.
Vegetable tasting course (modern vegan fine dining)
Single-vegetable plate (charred carrot, smoked beet, fermented squash) treated as a multi-course narrative. Eleven Madison Park, ONA, Plates, FREA all build menus this way.

How to order

At a strictly vegan room, the menu is vegan by default; order as you would at any restaurant. At a non-vegan room, ask whether the kitchen can adjust dishes. Most modern serious kitchens can; flag preferences at booking, not at the table. At Indian, Levantine, and Italian restaurants, large parts of the menu are vegan by default; you don't need to ask for a special menu. At French and steakhouse rooms, ask the kitchen to compose a vegan option; some will, some will not.

At vegan fine-dining tasting menus, the menu is the menu. Eleven Madison Park, ONA, and Plates work as full chef's-choice rooms. Reservations at the upper tier open 30 to 90 days ahead. Substitutes (vegan butter, vegan cheese, plant-based meat) are now widely available at mid-tier vegan rooms; if you prefer vegetable-led cooking over substitute-based cooking, look at the menu in advance. The rookie mistake is assuming vegan automatically means healthy: fried foods, refined carbohydrates, and high-sugar desserts are vegan but not lighter than non-vegan equivalents.

What to drink with it

Wine is broadly vegan if it's organic or biodynamic and uses no animal-derived fining agents (gelatin, isinglass, egg white). Natural and biodynamic wine producers (Loire, Jura, Sicily, Austria) are mostly vegan-compliant. Vegan beer is widely available; non-vegan beer typically uses isinglass (fish bladder) for clarification, although most craft beer no longer does. Non-alcoholic options run from kombucha to switchel to herbal infusions to dealcoholized wine. Cocktails are vegan unless they include cream, egg white, honey, or honey-derived syrups; alternatives (aquafaba for egg-white texture, agave syrup for honey) are now standard at serious bars.

Where to eat it

Eleven Madison Park (NY) is the flagship plant-based three-Michelin-star room. ONA (Ares, France, 1 star) was the first Michelin-starred vegan restaurant in France. Plates (London, 1 star from 2024) is the UK benchmark. FREA (Berlin), Cookies Cream (Berlin), and Tian (Vienna, 1 star) lead German-language vegan fine dining. Crossroads (LA), Plant Food + Wine (LA), Avant Garden (NY), and Charlie Bird's vegetable-led menus (NY) lead the US casual-upmarket tier. Tian Garden Wein (Austria) is fully vegan. London also has Mildreds, Tendril, Vanilla Black, and Bubala. India has the deepest casual vegan ecosystem; Bangkok and Tokyo have rapidly-growing vegan scenes.

A short history

Vegetarianism has been a serious tradition in India and Japan for over 2,000 years (Buddhist and Jain practice). The Western term 'vegan' was coined in 1944 by Donald Watson, founder of the Vegan Society in the UK. For most of the 20th century vegan dining sat at the casual end. The 2010s saw the plant-based meat industry boom (Impossible Foods 2011, Beyond Meat 2009, Oatly's milk-replacement push). Eleven Madison Park's 2021 conversion to fully plant-based was the symbolic fine-dining moment. ONA's 2021 Michelin star (France) and Plates' 2024 Michelin star (UK) cemented the format at the upper tier.
