The brasserie is the French restaurant that never closes. The word means 'brewery' and the format was imported to Paris by Alsatian refugees after the 1871 Franco-Prussian War, who opened beer halls serving choucroute, sausages, and oysters from morning until late at night. The 19th-century Parisian brasserie became the template: a large, mirror-walled room, leather banquettes, brass railings, white tablecloths, a long bar, a seafood platter on ice, and a menu that runs from 11am to midnight.

The cooking grammar is broad and unchanging. Oysters and seafood plateaus by the half-dozen or dozen, choucroute garnie, steak tartare, sole meuniere, steak frites, andouillette, croque monsieur, escargots, onion soup, and the dessert anchors (creme brulee, ile flottante, profiteroles, baba au rhum). The menu rarely shrinks and never reinvents itself. A brasserie that updates its menu has lost the plot.

At the table, the brasserie is a Parisian institution that runs on its own time. Waiters are career professionals in long aprons (the tablier), the seafood is shucked by a dedicated ecailler at the front of the room, and the wine list runs from a 25cl pichet to grower Champagne. Lunch crowds and pre-theater dinners are when locals fill the room; tourists arrive at the wrong hours and eat alone.

The classical Parisian brasserie tradition centers on a handful of historic rooms: Bofinger (oldest Alsatian, 1864), La Coupole (the Montparnasse art-deco landmark), Brasserie Lipp (Saint-Germain), Le Train Bleu (in the Gare de Lyon), Au Pied de Cochon (Les Halles, open 24 hours).

Where the brasserie came from. Strasbourg's winstubs are the regional cousins: smaller, wood-paneled, serving the same choucroute, baeckeoffe, and tarte flambee with Alsatian wine instead of Parisian wine.

Snails baked in their shells with garlic-parsley butter. Six or twelve, eaten with the little forks and the bread that catches the butter.
Baba au rhum
Yeast-leavened cake soaked in dark rum, served with whipped cream. The brasserie dessert that gets stronger as the night goes on.
Ile flottante
Poached meringue island floating on creme anglaise, drizzled with caramel. The light dessert option.

How to order

Start with oysters and a glass of Muscadet or Champagne. Half a dozen Belons or fines de claire is the standard opener. Then choose: a plateau de fruits de mer to share, a choucroute, a steak tartare, or a sole meuniere. Two courses (entree plus plat or plat plus dessert) with a 25cl pichet of red is the local lunch rhythm; three courses at dinner. The seafood arrives on ice; the meat arrives on a hot plate; the dessert cart comes around the room.

The rookie mistakes: ordering oysters in months without an R (the rule is outdated for farmed oysters but real for wild beds), asking for ketchup on the frites (the chef will judge), expecting fast service (a brasserie meal is paced over two hours), and assuming the menu changes seasonally (it does not, and that's the point).

What to drink with it

Champagne and Alsatian whites (Riesling, Sylvaner) anchor the seafood and choucroute side of the menu. Beaujolais and Cotes du Rhone for the steak and sausage dishes. Pilsner or Alsatian lager (Kronenbourg 1664, Meteor) by the half or pint, especially with choucroute. Coffee at the end; a small Calvados or Armagnac after. The brasserie is one of the few French rooms where ordering beer with dinner is genuinely traditional.

A short history

The Parisian brasserie scene exploded after 1871 when Alsace was annexed by Germany and tens of thousands of Alsatians fled to Paris. They brought beer culture, choucroute, and the long all-day restaurant model. The format peaked in the 1900-1930 belle epoque, with the great mirrored rooms of Bofinger, La Coupole, and Brasserie Lipp dating from this period. Most surviving historical brasseries are now owned by the Flo Group or the Bertrand Group rather than the original Alsatian families.

Are the historic Parisian brasseries still worth visiting?
