Antalya cooks from three sources, the Antalya Metropolitan Municipality says: the accumulated life of people who have lived here for centuries, Arab and African influence from its trade and tourism, and the Yörük communities of the mountains, with seafood from the coast. Tahinli piyaz, registered as a geographical indication in 2017, is beans under a tarator sauce of tahini, garlic, lemon juice and vinegar, and Antalya eats it as a main course rather than a salad. Şiş köfte, minced meat on skewers, comes with piyaz at Piyazcı Ahmet, Şişçi Ramazan and Kebap 32 Salih. Kabak tatlısı, sugar-cured pumpkin baked and topped with tahini and walnuts, closes the meal. Serpme börek, once called fıtır börek, and the head-meat soup paça çorbası are also registered, in 2021 and 2022. Hibeş, a tahini meze, is on the municipality's list of local flavours and on the menus of La Bohem Beach and Seraser. Citrus fills the winter: Finike oranges ripen from December to February, and turunç, the bitter orange, is made into peel jam. FoodFest Antalya held its fifth edition in Karaalioğlu Park in May 2026, and the Kaleiçi Old Town Festival added a gastronomy forum in October 2026.
