History

Khao soi came to Thailand via Yunnanese-Muslim traders along the Burmese border in the 19th century, taking its modern form in 1930s Chiang Mai with the addition of coconut milk. Bangkok adopted khao soi in the 1980s through northern-Thai migration and the Lanna-restaurant boom of the 1990s. Now Krua Aroy Aroy in Silom serves the Bib Gourmand canonical Bangkok version, with chicken or beef in a coconut-yellow-curry broth and a heap of crispy fried noodles on top.

Ingredients

  • 600g chicken thighs on the bone
  • 400ml coconut milk
  • 600ml chicken stock
  • 4 tbsp khao soi curry paste (or red curry paste plus 1 tsp turmeric and 1 tsp curry powder)
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 400g fresh egg noodles
  • 100g extra egg noodles, deep-fried until crispy (for topping)
  • Pickled mustard greens, shallots, lime wedges, coriander, chilli oil, to serve

Method

  1. In a heavy pot, fry the curry paste in 3 tbsp oil over medium heat for 2 to 3 minutes until fragrant.
  2. Add half the coconut milk; bring to a simmer. Cook 4 minutes until the oil separates.
  3. Add chicken pieces, the rest of the coconut milk and the stock. Simmer 25 to 30 minutes until chicken is tender.
  4. Stir in fish sauce and palm sugar. Taste and adjust.
  5. Meanwhile, boil the fresh egg noodles 2 minutes; drain.
  6. Divide noodles between bowls; ladle the curry and a chicken thigh over each. Top with crispy fried noodles, pickled mustard greens, shallots, coriander, lime and chilli oil.

Tip from the editors. If you can't find khao soi paste, use any good Thai red curry paste with 1 tsp ground turmeric and 1 tsp mild curry powder added; it gets you most of the way there.

Order: The moo cha muang (pork in cha muang leaf), the yum tomato pomelo salad and a side of khao soi.
