The Runza bierock is a soft yeast-dough pocket sandwich filled with ground beef, cabbage, and onion, brought to Nebraska by Volga German settlers. Yoshitomo's omakase is the highest expression of food craft currently operating in Omaha, a multi-course chef's menu of nigiri and composed dishes built around fish sourced from Japan's Tsukiji network. Gorat's T-bone steak is Nebraska corn-fed beef grilled over high heat and served with a baked potato and creamed corn, unchanged since 1944 and made famous by Warren Buffett's publicly documented devotion to the dish. The restaurant books out months in advance around Berkshire Hathaway's annual meeting weekend in May.
