The Runza bierock is a soft yeast-dough pocket sandwich filled with ground beef, cabbage, and onion, brought to Nebraska by Volga German settlers. The Runza chain based in Lincoln now operates throughout Nebraska and Iowa; the original recipe is one of the most specifically Nebraskan foods in existence.

How to make Runza (Bierock)

Ingredients

  • For dough: 250ml warm milk, 7g active dry yeast, 2 tbsp sugar, 450g plain flour, 1 tsp salt, 60g butter softened, 2 eggs
  • For filling: 500g ground beef, 1 small onion diced, 400g shredded green cabbage, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder
