Benidorm was a fishing town before it was a resort, and its kitchen still shows it. From the 18th century its men set almadraba nets for bluefin tuna along the Mediterranean, and the salted fish of that trade, mojama, tuna belly and roe, still opens a seafood meal here. The town's own rice cooks fresh anchovies with spinach from the huerta, and every beach restaurant on Poniente makes arroz a banda in a stock of rockfish and ñora, with arroz del senyoret and fideuà from up and down the coast. Since the 1960s Basque visitors have made Calle Santo Domingo in the old town a street of pintxo counters, and the resort's British, Dutch and Belgian regulars keep fish and chip shops, Irish pubs and eetcafés on Levante. A council calendar of six food weeks, from spoon dishes in February to traditional home cooking in November, puts set menus and tapas contests on through the year, and the hills behind supply turrón from Xixona and loquats from Callosa.
