History

Parathas are eaten across north India, but Delhi has a lane named after them. Gali Paranthe Wali, off Chandni Chowk in the walled city Shah Jahan built, was known for its silverware shops until paratha shops began moving in during the 1870s. The shops there fry stuffed parathas in ghee and serve them with potato curry, pickle and chutneys.

Ingredients

  • 300g whole wheat flour (atta), plus extra for dusting
  • Water to bind, about 180ml
  • 1/2 teaspoon salt
  • 3 medium potatoes, boiled, peeled and mashed
  • 1 small onion, very finely chopped
  • 1 green chilli, finely chopped
  • 2 tablespoons chopped coriander
  • 1 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon red chilli powder and 1/2 teaspoon garam masala
  • Salt to taste
  • Ghee for cooking

Method

  1. Knead the flour, salt and water into a soft dough and rest it covered for 20 minutes.
  2. Mix the potato with the onion, chilli, coriander, ajwain, chilli powder, garam masala and salt; keep the filling dry.
  3. Divide the dough and filling into 6 portions each.
  4. Roll a dough ball into a 10cm disc, place a filling ball in the centre, pull the edges over and pinch to seal.
  5. Dust and roll gently into a 15cm round without tearing.
  6. Cook on a hot tawa or frying pan for 1 minute a side, then brush with ghee and cook each side again until golden and crisp in spots.

Tip from the editors. For the Old Delhi style, shallow fry the rolled paratha in 2cm of hot ghee instead of cooking it on the tawa.
