Iced milk coffee: dark-roast robusta dripped through a metal phin filter into a glass holding sweetened condensed milk, then stirred and poured over ice. Thick, sweet and strong, built for the heat.
Ca phe sua da has its origins in French colonialism and is believed to be an adaptation of cafe au lait. Fresh milk was scarce because Vietnam's dairy industry was young and milk spoiled quickly in the heat, so imported sweetened condensed milk became the substitute. Dark-roast robusta paired best with it, its bitterness balancing the sweetness, and ice was added to suit the hot climate. In the South it is called ca phe sua da, iced milk coffee; in the North, ca phe nau da. Cheo Leo in District 3, which began selling ca phe vot in 1938, is known for its version.
