Bun bo Hue · Ho Chi Minh City
The fiery central-Vietnamese beef-and-pork noodle soup from Hue, built on a lemongrass-and-shrimp-paste broth stained red with chili oil, with thick round noodles, beef shank, pork knuckle and pig-blood curds.
Bun bo Hue comes from Hue in central Vietnam and dates to the late 1500s or early 1600s under the Nguyen lords, its cooking linked to the royal court. Beef bones and shank are simmered with lemongrass, then seasoned with fermented shrimp sauce and sugar, with spicy chili oil added; the predominant flavours are lemongrass and shrimp paste. The noodles are thicker and cylindrical, unlike pho, and the bowl usually has beef shank, oxtail, pork knuckle and pig blood curds. Bun Bo Nam Giao in District 1 has served it since 1991.
