Ashley Christensen's cast-iron broiled macaroni and cheese is the dish that made Poole's Diner nationally famous. The rotating daily variety uses a different cheese each day (Gruyere, blue cheese, Beemster, and others); it arrives bubbling in a cast-iron pan with a browned crust.
