Papdi chaat: crispy wheat discs (papdi) topped with chickpeas, potatoes, green chutneys, tamarind chutney, yogurt and chaat masala. The layering of textures and flavors takes minutes to assemble but requires each component to be made fresh. Vik's Chaat has been serving this in the warehouse on Fourth Street since the 1990s; the Michelin Guide recognition arrived in 2019.
