A thick meze of tahini loosened with lemon juice and warm water and seasoned with garlic, cumin and red pepper, which Turkish Wikipedia calls native to Antalya.

Hibeş is on the Antalya Metropolitan Municipality's list of the city's own flavours and in Turkish Wikipedia's list of dishes particular to Antalya, where one version is pastırmalı hibeş, hibeş with pastırma. Turkish Wikipedia's hibeş entry cites a report of the Western Mediterranean Development Agency on the culinary culture of Antalya. La Bohem Beach lists Köyceğiz hibeş among its mezes, and Seraser pairs Antalya hibeş with oak-smoked beef tongue and ember-roasted beetroot.

Make it at home

Ingredients

  • 250 g light tahini
  • Juice of 2 lemons
  • 6 large garlic cloves, crushed
  • 3 tsp sweet ground red pepper
  • 3 tsp cumin
  • 2 tsp ground black pepper
  • 2 tsp hot red pepper flakes (not isot)
  • 1 tsp salt
  • 1 cup lukewarm water

Method

  1. Put all the tahini in a deep bowl and add the spices and the salt.
  2. Stir in half the lemon juice with a wooden spoon.
  3. When the hibeş turns thick, add lukewarm water slowly while stirring, using the rest of the lemon juice and water to reach a mustard-like thickness.

Editor tip. Aim for a mustard-like thickness; the oil of the tahini should not float on top of the hibeş.
