History

Pecan pie became a Texas staple after the 1930s when the state's pecan industry boomed (Texas designated the pecan its state tree in 1919). The corn-syrup version popularised by Karo Syrup advertising in the 1930s is the dominant form; the bourbon-and-brown-sugar variant is the Austin gourmet standard. Ingredients

  • 250g plain flour
  • 150g unsalted butter, cold, cubed
  • 30g caster sugar
  • 1/4 tsp fine salt
  • 1 large egg yolk
  • 3 to 4 tbsp ice water
  • 200g pecan halves
  • 300ml dark corn syrup (Karo Dark) or use 200ml light corn syrup plus 100ml molasses
  • 150g dark brown sugar
  • 60g unsalted butter, melted
  • 4 large eggs
  • 2 tbsp bourbon (Texas Garrison Brothers or Maker's Mark)
  • 2 tsp vanilla extract
  • 1 tsp fine sea salt
  • Whipped cream or vanilla ice cream, to serve

Method

  1. Make the crust: pulse the flour, sugar and salt in a food processor. Add the cold cubed butter; pulse to coarse crumbs.
  2. Whisk the egg yolk with 3 tbsp ice water; pour in and pulse until the dough just clumps. Tip onto a floured surface and press into a disc.
  3. Wrap and chill 1 hour. Roll out to 4mm thick and line a 24cm pie dish, leaving a slight overhang. Crimp the edge. Chill 30 minutes.
  4. Heat the oven to 190C. Line the crust with foil and pie weights and blind-bake for 18 minutes. Lift out the foil; bake 5 more minutes.
  5. Reduce the oven to 175C.
  6. Toast the pecan halves on a tray for 5 minutes; cool slightly.
  7. Whisk the corn syrup, brown sugar, melted butter, eggs, bourbon, vanilla and salt in a large bowl until smooth.
  8. Scatter the toasted pecans across the par-baked crust. Pour the filling over; the pecans float to the top.
  9. Bake 40 to 50 minutes until the centre is just set with a slight wobble; if the edges of the filling crack, cover with foil for the last 10 minutes.
  10. Cool completely (at least 3 hours) before slicing. Serve with whipped cream or a scoop of vanilla.

Tip from the editors. Underbake slightly; the filling firms as it cools. A wobble in the centre at the timer mark gives the silky-sticky texture; a fully-set centre is dry.
