History

In the Yuan, Ming and Qing dynasties, nailao was served only at court. The original method mixed fresh milk with fermented glutinous rice wine, baked the mixture in a wooden cask and cooled it in an ice cellar. Wei Hongchen founded the shop Lin Ji Lao Pu in 1888, and in 1988 it was renamed Nailao Wei. Its nailao is known for a tender texture, a milky fragrance and a weak note of wine. Beijing's tourism office describes it as a snack people can make at home.

Ingredients

  • 500ml full-fat milk
  • 25g caster sugar
  • 3 tbsp jiuniang (sweet fermented glutinous rice) liquid, strained of grains
  • Dried goji berries or osmanthus, to finish

Method

  1. Warm the milk with the sugar in a pan over low heat to 80C, stirring until the sugar dissolves, then take it off the heat.
  2. Let the milk cool to about 40C, which is comfortably warm to a finger.
  3. Whisk in the jiuniang liquid, then pour the milk into two small heatproof bowls.
  4. Cover each bowl with cling film and keep them undisturbed at about 40C, in a yoghurt maker or an oven with only the light on, for 5 to 6 hours, until set like a soft custard.
  5. Chill for at least 2 hours, then top with a few goji berries or a pinch of osmanthus.

Tip from the editors. Do not stir or move the bowls while they set; if the curd is still liquid after 8 hours, add a little more jiuniang liquid and keep it warm.
