History

Gnocchi a la nicoise reflects the Liguria meets Provence cooking that defines cucina nissarda, the small potato dumpling fast cooked in salted water and tossed with either a daube ragout or a tomato basil sauce. Lou Balico and La Merenda are the canonical addresses, with the dish often served as a side to the slow cooked beef daube on the same plate.

Ingredients

  • 1kg floury potatoes
  • 200g 00 flour
  • 1 egg yolk
  • Salt
  • Daube sauce or fresh tomato basil sauce
  • Grated parmesan to serve

Method

  1. Boil whole unpeeled potatoes 25 minutes until tender; drain, peel and rice while hot.
  2. Mix riced potato with flour, egg yolk and a generous pinch of salt. Knead briefly into a soft dough.
  3. Divide into 6 pieces, roll each into a long cigar of 1.5cm diameter. Cut into 2cm gnocchi and roll each on a fork.
  4. Boil in batches in salted water; lift out 30 seconds after they float. Toss with hot daube sauce and serve with parmesan.

Tip from the editors. Add the flour gradually; too much makes the gnocchi heavy. The dough should be tacky but not sticky.
