The Djursland coast an hour from Aarhus is the best wild oyster territory in Denmark. From October to April the oyster harvest is at its peak; Mols Smokehouse on Egens Havhuse adds cold-smoked eel and trout from the same waters. Combine with a stop at the Ebeltoft harbour.
The historic inn of Molskroen in Ebeltoft holds Michelin recognition and serves a tasting menu built around the Djursland coast produce. The setting overlooking the bay is unlike anything in the city; dinner reservations weeks in advance.
Silkeborg 45 minutes west of Aarhus sits on Denmark's largest lake district. Silkeborg Bryghus in the Papirfabrikken arts complex brews craft beer to accompany the lakeside restaurants serving Jutland fish. Lunch on a paddleboat on Silkeborg Lake is the classic summer ritual.
The Mariager Fjord north of Aarhus produces some of the finest shrimp and trout in Jutland. The medieval cobblestone town of Mariager has a fish market on summer mornings and a restaurant scene centred on fjord produce. The rose garden is a bonus in June.
Randers 30 minutes north of Aarhus has one of the best traditional Danish town markets in Jutland on Saturday mornings, with farmhouse cheese, smoked sausage and honey from the Jutland heathland. The Naturpark Randers Fjord is a birdwatching and local-food trail combination.
Horsens south of Aarhus has a growing food scene anchored by Horsens Brewery and a Viking market in August that covers traditional food preparation, mead and roasted meats. The town market on Wednesday and Saturday covers local Jutland produce.
