Mols Bjerge (National Park foraging) ★ 4.4

The Mols Bjerge National Park on the Djursland peninsula is the nearest serious foraging territory to Aarhus. In September the chanterelle season peaks in the beech forests; the coastal dunes produce sea buckthorn in August. Guided foraging walks available through Visit Djursland.

Djursland (Wild Oysters and Smoked Fish) ★ 4.6

The Djursland coast an hour from Aarhus is the best wild oyster territory in Denmark. From October to April the oyster harvest is at its peak; Mols Smokehouse on Egens Havhuse adds cold-smoked eel and trout from the same waters. Combine with a stop at the Ebeltoft harbour.

Ebeltoft (Molskroen Michelin dining) ★ 4.4

The historic inn of Molskroen in Ebeltoft holds Michelin recognition and serves a tasting menu built around the Djursland coast produce. The setting overlooking the bay is unlike anything in the city; dinner reservations weeks in advance.

Silkeborg (Silkeborg Bryghus and lakeside dining) ★ 4.2

Silkeborg 45 minutes west of Aarhus sits on Denmark's largest lake district. Silkeborg Bryghus in the Papirfabrikken arts complex brews craft beer to accompany the lakeside restaurants serving Jutland fish. Lunch on a paddleboat on Silkeborg Lake is the classic summer ritual.

Mariager Fjord (Fjord produce and smoked salmon) ★ 4.1

The Mariager Fjord north of Aarhus produces some of the finest shrimp and trout in Jutland. The medieval cobblestone town of Mariager has a fish market on summer mornings and a restaurant scene centred on fjord produce. The rose garden is a bonus in June.
