Nash 19 on Princes Street is Cork's best-loved daytime cafe, known for open sandwiches and breakfast plates built on produce sourced from Princes Street market traders and county suppliers.

Claire Nash opened Nash 19 in 1992 on Princes Street, in a Georgian townhouse two doors from the English Market; the cafe's commitment to naming every farm and producer on the menu set the template for Cork's farm-to-table generation that followed. The open sandwich, served on Arbutus sourdough with a daily-rotating selection of toppings (Gubbeen smoked cheese, Frank Hederman smoked salmon, Tom Durcan spiced beef), became the lunchtime signature. Nash 19 won the Best Cafe in Ireland at the McKenna's Guides Irish Food Awards across multiple years from 2014 onward and was an early member of the Slow Food Cork convivium.
