The palace at Knossos, on the southern edge of the modern city, stored olive oil, wine and grain in pithoi taller than a person. Linear B tablets from the Cretan palaces record oil, grain, figs and wine as accounted goods, which makes Heraklion's larder one of the oldest documented in Europe.
Arab settlers expelled from al-Andalus moved the island capital here in 824 and built a moated castle they called rabd al-khandaq. The name survived as Chandax, then Candia, and the city's habit of trading grain, oil and wine through its harbour dates from this period.
Venice bought Crete in 1204 and ran Candia as its eastern warehouse. Sweet malmsey wine shipped from Cretan ports to northern Europe under the Malvasia name, and the Venetian street grid, the Loggia and the arsenali around the old harbour still shape where the city eats.
The Ottomans took the city in 1669 after a siege that lasted 21 years, and renamed it Kandiye. Coffee houses, sweet phyllo pastries and the vocabulary of the meze table arrived with them. Greeks kept calling the place Megalo Kastro, the big castle, well into the twentieth century.
Refugees from Asia Minor after 1922 brought the phyllo trades that now read as native. Phyllosophies traces its bougatsa to a master from Hamidiye in Smyrna, and Nea Alikarnassos east of the centre was founded by families from Halicarnassus, giving Heraklion a second bakery tradition.
The Seven Countries Study put Crete at the centre of the Mediterranean-diet argument, and the island's wild greens, barley rusk and olive oil became an export idea. Heraklion kitchens like Peskesi now work backwards from that research, farming the ingredients themselves.
