Ancient Athens (5th century BC)

Classical Athens cooked on a Mediterranean trinity of bread, olive oil and wine, eaten communally at the symposium with honey loukoumades-style sweets called enkrides, described by Athenaeus, and fish from the Saronic Gulf. The grammar of olive oil, charcoal grilling and dipping sauces still rules the modern Athenian table.

Ottoman Athens (1456 to 1832)

Four centuries of Ottoman rule layered Turkish, Arabic and Balkan flavours onto Greek cooking. Tzatziki and cacik, gyros and doner kebab, pastourma and the Asia Minor cured meats all date to this period. Coffee culture, the koutouki basement taverna and the meze-with-tsipouro habit emerged from Ottoman trade routes and food customs through this era.

Asia Minor refugees (1922 to 1930)

The 1923 population exchange brought 1.5 million Greek refugees from Asia Minor and Pontus into a city of half a million. They built whole new Athens quarters and rewrote the food map. Ouzeri and rebetiko bars filled Piraeus. Cappadocian sausages, pastourma and Smyrna-style mezedes became staples. Karamanlidika and the Karaiskaki style of Greek-Anatolian cooking still trace to this wave.

Tselementes and modern Greek cookery (1920s to 1960s)

Chef Nikolaos Tselementes published the first modern Greek cookbook in 1910 and codified the French-trained Greek cuisine that gave Athens moussaka and pastitsio in their current form, both built on bechamel. The post-war taverna of the 1950s and 1960s, with souvlaki on the spit and barrelled retsina, became the canonical Athens room and remains the city's everyday food.

The new Athenian wave (2010 to now)

The decade after the 2010 debt crisis pushed Athens to reinvent itself. Spondi has held a Michelin star from 2002 onwards, then Hytra and CTC followed. The Clumsies opened in 2014 and entered the World's 50 Best Bars list by 2015. Strange Brew launched the craft beer wave in 2017. Delta opened at the SNFCC in 2021. Athens now combines world-list restaurants and bars with mageirio cooking on the same block.

  • Asia Minor Greeks (Cappadocia, Pontus, Smyrna): The 1923 refugee wave brought pastourma, Karamanli sausages, Smyrna-style meatballs (soutzoukakia) and Pontic phyllo-pie traditions; Ta Karamanlidika tou Fani is the city's living archive.
  • Albanian community: Strong Albanian-Greek population since the 1990s has filled the kitchens of many Athens tavernas and bakeries; the morning bakery wave is largely Albanian-staffed across central Athens.
  • Bangladeshi and Pakistani Athens: The Bangladeshi and Pakistani communities centred around Omonia and Aiolou run the city's halal, Indian and Middle Eastern restaurants alongside the day labour grocery trade.
  • Chinese community: A small Chinese community concentrated around Metaxourgeio and Omonia runs Sichuan, Shanghai and Cantonese counters along with the wholesale clothing trade.
  • Sephardic Jewish refugees: A small Jewish-Greek community traces from Iberian Sephardim and Romaniote Greeks; the Beth Shalom synagogue on Melidoni and the Chabad kosher kitchen on Aisopou serve the community today.
