History

Sabich Tzvi Halabi, an Iraqi Jewish immigrant born in Baghdad in 1938, opened a kiosk on Uziel Street in Ramat Gan in 1961 with his wife Rina. Bus drivers on line 63 asked for something more filling, so Halabi folded his family's Iraqi Jewish Shabbat breakfast, fried aubergine and egg, into a single pita. Customers began asking to be served sabich, and the name stuck to the sandwich itself. New stands spread across Israel in the early 1990s, and Ramat Gan named the original junction Sabich Square in 2020. Tel Aviv's own stands, Sabich Tchernichovsky and Sabich Frishman among them, layer the aubergine, egg, hummus, salad and amba to the same formula.

Ingredients

  • 2 large aubergines, sliced into 1cm rounds
  • Sunflower oil, for frying
  • 4 eggs
  • 4 pita breads
  • 200g hummus
  • 1 tomato and 1/2 cucumber, finely diced (Israeli salad)
  • 2 tbsp amba (mango pickle sauce)
  • 3 tbsp tahini sauce, thinned with water and lemon
  • Pickled cucumbers, sliced
  • Sea salt

Method

  1. Salt the aubergine slices and leave 15 minutes to sweat, then pat dry.
  2. Boil the eggs 9 minutes for a firm yolk, cool, peel and slice.
  3. Shallow fry the aubergine slices in batches in hot oil until deep golden and soft through, about 3 minutes a side. Drain on paper.
  4. Warm the pita and spread the inside with hummus. Layer in fried aubergine, sliced egg and diced Israeli salad.
  5. Finish with tahini sauce, a generous spoon of amba and pickled cucumber slices. Press closed and eat immediately.

Tip from the editors. Salt the aubergine first and pat it dry; skip that step and the slices soak up too much oil and turn soggy.
