History

Vines were planted in the Priorat by the Carthusian monks of Scala Dei, founded in 1194. Phylloxera ruined the area at the end of the 19th century, and cooperatives dominated until a group of winemakers revived it in the 1990s. Catalonia raised Priorat to DOQ status in 2000, confirmed nationally in 2009; it remains the only Catalan appellation with that grade, its reds made mostly from Garnatxa and Carinyena on llicorella slate.

Ingredients

  • 1 bottle of DOQ Priorat red
  • A decanter
  • Large wine glasses

Method

  1. Stand the bottle upright for a few hours if it is older, so the sediment settles.
  2. Open it about an hour before drinking and pour it slowly into a decanter.
  3. Serve at about 16 to 18C, slightly below room temperature in summer.
  4. Pair it with grilled lamb, aged beef or hard cheeses.

Tip from the editors. Young Priorat is dense and tannic; an hour in the decanter softens it more than any food match.
