Minestrone alla genovese

History

Genoa's tourist office describes minestrone as a child of the cucina povera, a pot of whatever the garden gave, thickened by crushing the potatoes and beans halfway through cooking and made Genoese by the pesto stirred in at the end. Ligurian cooking has long added pesto to its minestroni, the vegetable soups richest in autumn, and the tourist office recipe still serves it in deep bowls, left to rest before eating and just as good cold.

Ingredients

  • 2 potatoes
  • 200g pumpkin
  • 2 courgettes
  • A quarter of a white cabbage
  • 150g green beans
  • 150g fresh or soaked borlotti and cannellini beans
  • 100g peas or broad beans
  • 2 ripe tomatoes
  • A Parmigiano rind (optional)
  • 100ml olive oil and coarse salt
  • 150g short pasta such as ditalini
  • 4 tbsp pesto genovese

Method

  1. Chop all the vegetables into small pieces and put them in a large pot with about two litres of boiling water.
  2. Halfway through cooking, crush some of the potatoes and beans against the side of the pot to thicken the soup, then add the oil, a handful of coarse salt and the Parmigiano rind.
  3. When the vegetables are very soft, add the pasta and cook until tender.
  4. Take the pot off the heat, stir in the pesto and let the soup rest a few minutes before serving.

Tip from the editors. Stir the pesto in only once the pot is off the heat, as the Genoese recipe says, so the basil keeps its colour and scent.
