History

Mawa kachori is the sweet cousin of the onion kachori: Wikipedia's entry on Rajasthani cuisine describes it as a kachauri stuffed with mawa, reduced milk. Condé Nast Traveller India's contributor praises Rawat Misthan Bhandar's, doused in sugar syrup with a hint of cardamom and dried fruit inside, best eaten straight from the kadhai. Travel + Leisure Asia lists it at LMB and Sodhani, and Outlook Traveller Eats calls Rawat's the best thing on that shop's menu.

Ingredients

  • 250g plain flour
  • 3 tablespoons ghee
  • 1/4 teaspoon salt and about 110ml water
  • 150g mawa (khoya), crumbled
  • 30g chopped pistachios and 30g chopped almonds
  • 20g raisins
  • Seeds of 4 cardamom pods, crushed
  • 40g sugar
  • 200g sugar, 150ml water and a pinch of saffron, for the syrup
  • Ghee or oil for deep frying

Method

  1. Rub the ghee into the flour and salt, add the water and knead a firm dough. Rest for 30 minutes.
  2. Mix the mawa, nuts, raisins, cardamom and the 40g sugar for the filling.
  3. Boil the 200g sugar with the water and saffron for 8 minutes into a light syrup and keep it warm.
  4. Divide the dough into 8 balls, flatten each, fill with the mawa mixture, seal and roll gently into a flat disc.
  5. Fry in ghee or oil at about 150C over a medium-low heat for 8 to 10 minutes, turning, until golden and crisp.
  6. Dip each hot kachori in the warm syrup for about a minute and lift out to drain.

Tip from the editors. Keep the syrup warm rather than hot and dip for no more than a minute, so the crust stays crisp at the edges.
