History

Machboos, also written machbous or makbous, is the Gulf form of kabsa, a mixed rice dish whose origin is contested between Saudi Arabia and Yemen. The name comes from an Arabic root meaning to press, because rice, meat and spices cook together in one pot. Spices usually include black pepper, cloves, cardamom, saffron, cinnamon and black lime. The Michelin Guide says it can be served with meat or fish, slow cooked with dried limes and saffron, and Erth serves a modern take with lamb in a sweet and savoury sauce.

Ingredients

  • 1kg chicken thighs and drumsticks on the bone
  • 400g basmati rice, rinsed and soaked for 30 minutes
  • 2 onions, finely sliced
  • 4 garlic cloves, crushed
  • 2 tomatoes, chopped
  • 2 dried limes (loomi), pierced
  • 2 tablespoons bezar spice mix, or 2 teaspoons each of cumin and coriander plus 1 teaspoon turmeric
  • 1 cinnamon stick, 4 cardamom pods and 4 cloves
  • 3 tablespoons ghee
  • 700ml water
  • A pinch of saffron soaked in 2 tablespoons hot water, and salt

Method

  1. Melt the ghee in a heavy pot and fry the onions for 10 minutes until golden. Add the garlic and whole spices and cook for 2 minutes.
  2. Add the chicken and brown it on all sides. Stir in the bezar and cook for 1 minute.
  3. Add the tomatoes, dried limes, water and 2 teaspoons of salt. Simmer covered for 30 minutes until the chicken is tender.
  4. Lift out the chicken and measure the stock, topping up to 600ml if short. Bring it back to a hard boil.
  5. Drain the rice and stir it into the stock. Cover, turn the heat to its lowest and cook for 15 minutes without lifting the lid.
  6. Lay the chicken on the rice, spoon over the saffron water and rest covered for 10 minutes before serving from one platter.

Tip from the editors. Pierce the dried limes so the sourness runs into the stock, and use the stock you measured, not extra water, for fragrant rice.
