History

Huevos motuleños are a breakfast from Motul, Yucatán: a fried tortilla spread with refried black beans, a fried egg on top, and a tomato sauce cooked with diced ham and peas, often with fried plantain, cheese and habanero salsa. Local oral history credits Don Jorge Siqueff, owner of Motul's best-known restaurant, who is said to have created the plate in 1921 when Governor Felipe Carrillo Puerto asked for a special breakfast for visitors from Mexico City, among them José Vasconcelos and Diego Rivera. In Cancún, La Casa de las Mayoras, in the MICHELIN Guide, serves it at breakfast.

Ingredients

  • 4 corn tortillas
  • 4 eggs
  • 200 g refried black beans
  • 3 tomatoes
  • 1/4 white onion
  • 1 garlic clove
  • 60 g cooked ham, diced
  • 60 g peas
  • 1 ripe plantain, sliced
  • 40 g queso fresco or Edam, crumbled or grated
  • Oil for frying
  • Salt
  • Habanero salsa

Method

  1. Blend the tomatoes, onion and garlic, then simmer the purée in a little oil for 8 minutes with the ham and peas, and season.
  2. Fry the plantain slices in oil until caramelised, then drain.
  3. Fry the tortillas in oil until crisp, drain, and spread each with warm refried beans.
  4. Fry the eggs sunny side up in the same pan.
  5. Set an egg on each tortilla, spoon the tomato, ham and pea sauce over, and scatter with cheese.
  6. Serve with the fried plantain and habanero salsa.

Tip from the editors. Keep the yolks runny; the yolk and the tomato sauce together soak the crisp tortilla, which is the point of the dish.
