Busan's hoe culture runs on live tanks and volume: flounder, rockfish and seasonal catch sliced minutes after netting, eaten in chogochujang or wrapped in lettuce and perilla. The template is Jagalchi, buy downstairs, eat upstairs, and Millak Raw Fish Town, where the takeaway box and a beach wall count as a restaurant. It differs from sashimi on purpose: thicker cuts, bolder sauces, and a maeuntang stew boiled from the frame to close.

Ingredients

  • 1 very fresh sashimi-grade flounder or rockfish, filleted and skinned by your fishmonger
  • Chogochujang: 3 tbsp gochujang, 2 tbsp vinegar, 1 tbsp sugar, 1 tsp sesame oil
  • Ssam set: lettuce, perilla leaves, sliced garlic, green chilli, ssamjang
  • For maeuntang: the fish frame, 1 litre rice-washing water, Korean radish, gochugaru, doenjang, crown daisy

Method

  1. Chill the fillets hard, then slice across the grain into thick, finger-width pieces with one clean pull per cut.
  2. Whisk the chogochujang and set out the ssam vegetables.
  3. Eat the first slices plain, then in chogochujang, then wrapped with garlic and ssamjang in perilla.
  4. Meanwhile simmer the frame with radish, doenjang and gochugaru for 15 minutes, add crown daisy, and finish the meal over rice with the stew.

Tip from the editors. Only buy fish you would eat raw from a fishmonger who knows that is the plan; the stew from the bones is not optional in Busan.
