History

Ghewar is a disc-shaped Rajasthani sweet with a honeycomb texture, made from ghee, flour and sugar syrup. Wikipedia ties it to the month of Shravana, Teej and Raksha Bandhan, and says it is gifted to newly married daughters on Sinjara, the day before Gangaur and Teej, and that LMB introduced chhena ghevar in 1961. Condé Nast Traveller India's contributors buy it for the Gangaur and Teej processions, and Travel + Leisure Asia says ghevar is available at almost all top sweet shops in Jaipur.

Ingredients

  • 100g ghee, chilled until solid
  • 5 ice cubes
  • 150g plain flour
  • 50ml cold milk
  • About 350ml iced water
  • 1 litre ghee or neutral oil for frying, in a deep, narrow pan
  • 250g sugar and 150ml water, for the syrup
  • Seeds of 3 cardamom pods and a pinch of saffron
  • Chopped pistachios, to finish

Method

  1. Whisk the chilled ghee with the ice cubes for 5 minutes until white and creamy, then lift out any unmelted ice.
  2. Add the flour a spoonful at a time with the milk, whisking smooth, then thin with the iced water to a runny batter that falls in a ribbon.
  3. Boil the sugar, water, cardamom and saffron for 8 minutes into a one-thread syrup and keep it warm.
  4. Heat the frying ghee to about 170C. Pour a thin stream of batter into the centre of the pan from a height, wait for it to stop sputtering, and repeat 3 or 4 times to build a lattice.
  5. When golden at the edges, lift out with a skewer, drain, and dip briefly in the warm syrup.
  6. Cool, then top with pistachios, or with whipped cream, rabri or crumbled mawa.

Tip from the editors. Use a deep, narrow pan and keep the batter cold; warm batter will not form the honeycomb holes.
