History

Vincenzo Tanara mentioned the cotechino in his 1644 treatise, and Modena and Ferrara disputed its invention for more than a century: Antonio Frizzi's 1772 Salameide gave the cotechino to Ferrara and the zampone to Modena, while the Modenese Tigrinto Bistonio had already claimed a Modenese origin in 1761. The IGP for Cotechino Modena settled the matter in Modena's favour, and the sausage is still made with meat ground through 7 to 10mm plates.

Ingredients

  • 1 fresh cotechino Modena IGP, about 500g
  • 600g floury potatoes
  • 60g butter
  • 150ml whole milk, warm
  • Salt and nutmeg

Method

  1. Prick the cotechino in a few places, put it in a pot of cold water and bring it slowly to a bare simmer.
  2. Cook it gently for 2 hours 30 minutes to 3 hours, never letting the water boil.
  3. Boil the potatoes in their skins, peel them while hot and press them through a ricer.
  4. Beat in the butter, then the warm milk, and season with salt and a little nutmeg.
  5. Slice the cotechino 1cm thick and serve hot on the mash.

Tip from the editors. Leave the cooked cotechino in its water off the heat for 10 minutes before slicing; it holds together and stays moist.
