Chebab, also spelled chabab, is an Emirati breakfast pancake made from a flowing batter of yeast, sugar, eggs, saffron and cardamom, cooked on a hot plate until its surface is covered in holes. The Michelin Guide, in September 2025, said it is believed to be more than 500 years old and that it was a staple for pearl divers and sailors. Accounts of Emirati cuisine list it among the breakfast breads with ragag and khameer, served with cheese, date syrup or eggs. Families also make it for Eid and for suhoor in Ramadan.

Ingredients

  • 250g plain flour
  • 1 teaspoon instant yeast
  • 2 tablespoons sugar
  • 1 egg
  • Half teaspoon ground cardamom
  • A pinch of saffron soaked in 2 tablespoons hot water
  • 350ml warm water
  • Pinch of salt
  • Melted butter or ghee for brushing
  • Date syrup, honey and soft cheese, to serve

Method

  1. Whisk the flour, yeast, sugar, cardamom and salt. Add the egg, saffron water and warm water and whisk to a thin, pourable batter.
  2. Cover and rest for 1 hour until the surface is bubbly.
  3. Heat a non-stick pan over medium heat and wipe it with a little butter.
  4. Pour a ladle of batter and spread thinly. Cook on one side only for 2 minutes until holes form and the top sets.
  5. Brush with butter, fold or stack, and serve with date syrup, honey and cheese.

Tip from the editors. Cook only one side: the holes on the surface are what hold the syrup, and flipping the pancake ruins them.

TipIt runs on walk-ins and queues, and Michelin advises expecting a wait; seating splits between private cabins, majlis and regular tables.
