History

In the 1930s, law student Casimiro Pinto Neto, nicknamed Bauru for his hometown, walked into Ponto Chic on Largo do Paissandu and asked the sandwich maker to build him one to his own specification: melted cheese inside a pao frances with the soft crumb removed, then roast beef and tomato. Pickled cucumber joined the recipe later. The sandwich became the house's best seller and spread across the city under his nickname. The city of Bauru later wrote an official recipe into municipal law to protect the name. Accounts disagree on the exact year, with 1934, 1936 and 1937 all cited, including by Ponto Chic's own current telling, so this account keeps to the decade rather than pick one.

Ingredients

  • 1 pao frances roll, crumb removed from the top half
  • 120g thinly sliced roast beef
  • 80g mozzarella or prato cheese, sliced
  • 2 slices tomato
  • 4 to 5 slices pickled cucumber

Method

  1. Warm the roast beef briefly in a dry pan, just until heated through.
  2. Lay the cheese in a small pan or bain-marie and melt until soft and pourable.
  3. Hollow the top half of the roll, pulling out the soft crumb so the melted cheese has somewhere to sit.
  4. Layer the beef, tomato and pickled cucumber on the bottom half.
  5. Pour the melted cheese over the top half and close the sandwich immediately.
  6. Press gently and cut in half before the cheese sets.

Tip from the editors. Removing the crumb is what lets the cheese pool instead of sliding off; do not skip that step.
