Asheville sits on the western edge of the North Carolina BBQ map, with the Lexington tomato-and-vinegar dividing line passing through Buncombe County. Eastern-style whole-hog cookery (vinegar-pepper sauce) and Lexington shoulder (tomato-vinegar sauce) historically met in Asheville.
