FUME in Rotermann is the newest Siigur-group room and a new 2026 Michelin Bib Gourmand, built around a Madrid-made Vulcano Gress grill that runs the kitchen.

Signature: Vulcano grill plates, Open-fire mains

Order: Whatever is on the live-fire grill that night; the Vulcano sears at temperatures most kitchens cannot.

Tip: 120 seats inside, 60 on the summer terrace. Part of the Siigur Restaurants group alongside NOA, NOA Chef's Hall and Tuljak.
