Marrakech's Jemaa el-Fna is UNESCO-listed for its oral storytelling tradition; from 18:00 the square transforms into the city's biggest open-air food market.
Tip: Walk the row; pick the stall with the longest local queue. Stalls 31, 32, 14 are the canonical first stops.
Rahba Kedima, Marrakech's spice square in the medina, is the canonical place to buy ras el hanout, saffron, dried rose buds, orange-blossom water blends.
Tip: Negotiate hard; first asking is twice the going price. The Berber pharmacy stalls sell argan oil and natural cosmetics.
