History

The pie was made at Easter to celebrate the Resurrection, and the old accounts praise Genoese housewives able to layer 33 sheets of pastry, one for each year of Christ's life. The filling is built on prescinsêua, the soft, slightly sour curd of the Genoese dairy, with bietoline or wild greens and marjoram, and whole eggs are set into hollows in the filling. The city's tourist office notes that it is now sold all year in Genoese restaurants and delicatessens.

Ingredients

  • 500g plain flour
  • 4 tbsp olive oil, plus more for brushing
  • About 250ml water and a pinch of salt
  • 1kg young chard or mixed greens
  • 400g prescinsêua, or ricotta with a spoonful of yoghurt
  • 60g grated Parmigiano
  • Fresh marjoram
  • 8 eggs, 2 of them for the filling
  • Salt and pepper

Method

  1. Knead the flour, oil, water and salt to a soft, elastic dough, divide it into at least ten small balls and leave them to rest under a cloth for an hour.
  2. Wilt the chard, squeeze it dry and chop it; mix with the prescinsêua, Parmigiano, marjoram, two eggs, salt and pepper.
  3. Roll the balls out as thinly as you can. Line an oiled deep tin with half the sheets, brushing each with oil.
  4. Spread in the filling, make six hollows and break an egg into each. Cover with the remaining sheets, oiling each and blowing a little air between them, seal the edges and prick the top.
  5. Bake at 180C for about an hour, until deep golden, and let it cool before cutting.

Tip from the editors. Let it cool completely before cutting, so the pastry layers hold and the whole eggs slice cleanly in the filling.
