History

Roti with curry came to Phuket with its Muslim communities of Indian and Malay descent, which is why the island's breakfast tables carry roti and chicken curry beside Chinese noodles. Phuket has a large Muslim community, and halal roti shops open at dawn across Phuket Town. Some are long-running: one charcoal-pan stall on Thep Krasattri Road and another on Chaofa Road both hold a Michelin Bib Gourmand for their breakfast roti.

Ingredients

  • 500g plain flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 250ml warm milk or water
  • 100ml vegetable oil, plus more for frying
  • Beef or chicken massaman or yellow curry, to serve

Method

  1. Mix the flour, salt and sugar, then add the egg and milk and knead for 10 minutes to a soft, smooth dough.
  2. Divide into 8 balls, coat each generously in oil and rest covered for at least 2 hours.
  3. Oil the worktop and press a ball out with your palms, then stretch it paper-thin from the edges.
  4. Fold the sheet into a square parcel.
  5. Fry in a little oil in a hot pan for 2 minutes a side until blistered and golden.
  6. Clap the roti between your hands to loosen the layers and serve with the curry.

Tip from the editors. The long oiled rest is what lets the dough stretch without tearing; do not cut it short.
