History

The Danish pølsevogn (sausage wagon) appeared on Copenhagen streets in 1921 and remains a city institution. The modern organic version dates from DØP's 2009 launch on Købmagergade; the classic ristet (toasted) version still anchors counters like John's Hotdog Deli outside Central Station.

Ingredients

  • 4 long red-skinned Danish wienerpølser (or substitute Bavarian-style frankfurters)
  • 4 hot dog buns
  • For remoulade: 150g mayonnaise, 2 tablespoons piccalilli, 1 teaspoon curry powder, 1 teaspoon mustard
  • 1 large onion, finely diced and fried in butter until crisp golden
  • 1 small onion, finely sliced raw
  • 1 small pickled cucumber, sliced into long thin strips
  • Tomato ketchup
  • Danish mustard

Method

  1. Mix remoulade ingredients in a small bowl. Chill.
  2. Fry the diced onion in a knob of butter, 8 to 10 minutes, stirring, until deep gold and crisp.
  3. Heat the wienerpølser in simmering water for 5 minutes until hot through.
  4. Toast the buns briefly under the grill or in a dry pan.
  5. Spread a stripe of remoulade in each bun, lay in a wienerpølse.
  6. Top with ketchup, mustard, fried onion, raw onion, pickled cucumber strips. Serve immediately.

Tip from the editors. The Danish version uses bright-red pølser; if you can't find them, frankfurters work but lose the visual signature.
