History

Two accounts place the picadinho's rise in the Rio night. One says it fed artists and journalists in the all-night restaurants of Lapa. The other, from Ruy Castro's book A noite do meu bem (2015), says the Austrian Max von Stuckart put it on the menu of the Meia-Noite nightclub near the Copacabana Palace, where the French chef Paul Ruffin used filet mignon tips, butter, tomato and herbs, served with rice, watercress, farinha and a poached egg. Sources date this to the 1940s or the 1950s.

Ingredients

  • 700g beef (rump or chuck), cut by knife into 1cm cubes
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 3 ripe tomatoes, chopped
  • 2 tablespoons oil
  • 200ml beef stock or water
  • 2 tablespoons chopped spring onion and parsley
  • Salt and pepper
  • To serve: white rice, farofa, 4 fried eggs, sautéed collard greens

Method

  1. Season the beef and brown it in batches in the hot oil, then set aside.
  2. In the same pot soften the onion and garlic, add the tomatoes and cook for 5 minutes.
  3. Return the beef, add the stock, cover and simmer over low heat for 40 minutes until tender, adding water if it dries.
  4. Stir in the spring onion and parsley and reduce the sauce until it coats the meat.
  5. Serve with rice, farofa, a fried egg and collards.

Tip from the editors. Cut the beef by hand into even cubes rather than mincing it, so the pieces stay distinct and juicy in the sauce.
