History

Rice sits at the centre of Salou's table: the town's rice days, "Per a gustos, els arrossos", reached a seventh edition in 2026 with 22 restaurants, built on Bayo rice and paired with local wines. Seafood paella is the version most visitors order, at family places by the port such as Terramar, open since 1983, and at newer rice houses such as Roce, opened in 2024 below the cliffs on Carrer de Colón.

Ingredients

  • 320g bomba or Delta rice
  • 8 large prawns
  • 300g mussels
  • 200g squid, in rings
  • 200g clams
  • 1 ripe tomato, grated
  • 2 garlic cloves
  • 1 tsp sweet paprika
  • A pinch of saffron
  • 1.2 litres hot fish stock
  • 60ml olive oil
  • Salt
  • Lemon to serve

Method

  1. Sear the prawns in the oil in a paella pan and set them aside; fry the squid in the same oil.
  2. Add the garlic, tomato and paprika and cook down to a thick sofregit.
  3. Add the rice, stir for a minute, then the hot stock with the saffron; season and spread the rice evenly.
  4. Cook for 10 minutes on a high heat, add the mussels and clams and return the prawns, then cook 8 minutes more on low and rest for 5 minutes.

Tip from the editors. Use a pan wide enough that the rice sits no deeper than a finger; that is how the bottom crust forms.
