Lambrusco

History

The Lambrusco vine has a long history in Emilia: there is archaeological evidence that the Etruscans grew it, and Cato the Elder praised its yields. Lambrusco di Sorbara is grown only in Modena province, and the Grasparossa di Castelvetro zone runs through the hills from Castelvetro and Vignola into part of the comune of Modena. Sorbara, called the Lambrusco of the violet, is pollinated by Salamino vines planted beside it, since its own flowers give too little pollen.

Ingredients

  • 1 bottle of dry Lambrusco di Sorbara or Grasparossa, chilled
  • 200g prosciutto crudo
  • 150g salame
  • 150g mortadella
  • 200g Parmigiano Reggiano in chunks
  • A batch of gnocco fritto or crescentine

Method

  1. Chill the Lambrusco to about 10C, cooler than a still red.
  2. Lay the salumi on a board and break the Parmigiano into chunks.
  3. Fry or bake the gnocco fritto or crescentine just before serving so they arrive hot.
  4. Pour the Lambrusco into tumblers or wide glasses so the foam settles quickly, and serve with the board.

Tip from the editors. Choose a secco (dry) label for food; the sweet amabile styles that sold abroad in the 1970s belong with dessert.
