Ingredients

  • 1 1/2 pounds 80/20 ground chuck
  • Kosher salt and black pepper
  • 4 slices Tennessee cheddar (Sweetwater Valley or local equivalent)
  • 4 brioche or potato buns
  • 4 thick tomato slices
  • 1 cup shredded lettuce
  • Bread-and-butter pickles
  • Mayonnaise and yellow mustard

Method

  1. Divide the ground chuck into 4 equal portions. Form into loose patties slightly wider than the buns.
  2. Press a thumbprint into the center of each patty.
  3. Heat a cast-iron skillet or griddle over high heat until smoking hot.
  4. Season the patties aggressively with salt and pepper just before cooking.
  5. Sear the patties 2 minutes without moving until a deep crust forms.
  6. Flip, top each with cheese, and cook 90 seconds for medium-rare.
  7. Toast the bun cut sides briefly in the same skillet.
  8. Build each burger: bottom bun, mayo, mustard, lettuce, tomato, patty with cheese, pickles, top bun.

Tip from the editors. Salt the patties after forming, never mix it in. The crust comes from very high heat and a dry surface.
