History

Katmer is a breakfast course in Gaziantep, not a dessert, and the counters that make it open at five or six in the morning and close before lunch. The dough is stretched by hand over a marble slab until light passes through it, which is why the shops build their windows around the counter: watching the throw is part of the sale. The filling is kaymak, the thick clotted cream of the region, and the pistachio is used raw and ground so it keeps its colour. Tradition also ties katmer to weddings, where it is served to the couple on the first morning.

Ingredients

  • 250g plain flour
  • 150ml warm water
  • 1 tsp salt
  • 2 tbsp sunflower oil, plus more for stretching
  • 150g kaymak or thick clotted cream
  • 100g raw green pistachios, finely ground
  • 2 tbsp caster sugar
  • 30g butter, melted

Method

  1. Knead flour, water and salt into a soft dough, then oil it well, cover and rest for one hour.
  2. Oil a large smooth surface. Press the dough out flat, then stretch it from the centre outwards until it is almost transparent and roughly 70cm across.
  3. Scatter the pistachio and sugar over the middle third, then spoon the kaymak over the top.
  4. Fold the four sides in over the filling to make a square parcel, keeping the layers loose.
  5. Brush with melted butter and bake on a hot stone or heavy tray at 240C for 8 to 10 minutes.
  6. Cut into squares and eat immediately, while the cream is still liquid.

Tip from the editors. If the dough tears while stretching, patch it and carry on. A torn katmer still bakes, an over-rested one will not stretch.
