History

Jalebi is fried and sold across South Asia, from breakfast stalls in Delhi to Nepal, where it is called jerry, a name linked to the Mughal emperor Jahangir. The batter is fermented before frying, which gives the crisp spirals a faint sourness against the sugar syrup. In Chandni Chowk it is fried to order at dedicated counters and handed over hot, straight from the syrup.

Ingredients

  • 150g plain flour (maida)
  • 1 tablespoon gram flour (besan) or cornflour
  • 2 tablespoons plain yoghurt
  • About 150ml water
  • Ghee or oil for frying
  • 300g sugar
  • 150ml water for the syrup
  • A pinch of saffron or a few drops of lemon juice
  • 1/2 teaspoon ground cardamom

Method

  1. Whisk the flour, besan, yoghurt and water into a thick, smooth batter and leave covered in a warm place for 8 to 12 hours to ferment.
  2. Boil the sugar and water for 5 minutes to a light one-string syrup, add the saffron and cardamom and keep warm.
  3. Beat the batter again and pour it into a squeeze bottle or a cloth with a small hole.
  4. Heat 3cm of ghee to 170C and pipe spirals directly into it.
  5. Fry for about 2 minutes, turning once, until crisp and golden.
  6. Lift straight into the warm syrup for 30 seconds, then drain and eat hot.

Tip from the editors. If the batter has not soured enough, a pinch of baking soda before frying helps it crisp.
